This is Robert de Niro and celebrity chef Nobuyuki Matsuhisa’s first Nobu hotel venture in Latin America, on the southern tip of Mexico’s Baja California peninsula. It’s a modern whitewashed resort with neat cactus gardens, four pools and an empty beach – but the food is the star.

Nobu is a four-mile, or 15-20 minute drive, from busy downtown Cabo – a bit of a mission if you want bars, shops and restaurants, but with the pay-off of an often empty stretch of Pacific coast (though ocean swimming isn’t recommended). Beach and pool areas can sometimes get a bit blustery. There’s not much else around, but golfers will be happy to hear Diamante’s El Cardonnal, designed by Tiger Woods, is next door. It's 45 minutes from Los Cabos airport.

The new 200-room hotel has straight-lined, modernist, whitewashed buildings, smart teak and grounds with freshly planted cactus, agave and maguey plants, plus small herb and vegetable gardens, a giant chess set and dark-tiled fountains. With five bars, there’s a ‘good times’ feel, especially around swimming pools, with families and holidaying groups, as well as relaxing couples.

Staff are friendly and helpful from check-in and in the restaurants, especially at Nobu itself, where the entire team (chefs, hostesses, waiters and more) shout “irrashaimase” to welcome diners, and waiters make menu recommendations and suggest how best to eat each dish. As well as four swimming pools, including a beachfront infinity pool, there’s a well-equipped gym and Esencia Spa (which has a white slightly clinical look), a sauna, steam room, 13 treatment rooms and well-trained therapists.

Rooms are comfortable and spacious, decorated mainly with creams, whites and light woods. For a new hotel with striking exteriors, they’re a little lacking in design flair or local character. Nobu and Malibu Farm cookbooks rest on coffee tables. Bathrooms have a wall with what looks like a thousand rounded stones embedded, a rainshower, twin sinks, large tub and Natura Bissé products.

Food’s the big reason to be here, with Mexican classics, from guacamole to aguachile, at poolside Pacific restaurant, plus original jalapeño margaritas. Mexico’s ‘green gold’ is heaped on top of farm-to-table restaurant Malibu Farm’s signature avocado pizza, with more avocado in bulging burritos and ABC tacos at breakfast, alongside American breakfasts, Spanish omelettes and healthy options, such as as quinoa oatmeal and gluten-free vanilla pancakes, plus tea, coffee, yogurt and various juices.

Cups of warmed sake are served over at Nobu, which has a menu of Japanese-Peruvian sharing dishes with a few Mexican influences, such as salmon sashimi, cauliflower in jalapeño sauce and Atlantic cod with miso in a lettuce ‘taco’, all eaten while overlooking waves roll in off the Pacific.
